I was so nervous and tense, and I couldn't sleep last night. I was thinking, thinking, and thinking... I thought it just wouldn't work for me. :( But it worked out fine. And I had a great lunch! My girl friends came over with their home made delicious foods and they were all good!! We also made Campagne bread together and it was fun. I can do this every week!! ;) Thank you girls!!
I was studying about my new camera today. :) And took some pictures of my Campagne bread. I can see the difference between the new camera and my old one! It's so fun. :):) I hope I can go take outside picture soon!
I wondered how much different I could tell between regular flour and organic flour. So this time, I used organic white flour and organic whole wheat flour for my Campagne bread. When I was mixing, I felt organic flour needed a little bit more water. When I baked, the organic-bread took longer time. The taste, umm... I think I got organic all-purpose flour instead of hard flour. So it didn't have nice chewy texture and it's just very soft. :( I have to find Organic HARD flour somewhere..

When I baked it, the sweet red beans became very dry... :( And I could have put more Yomogi for the color and flavor...

With my new white hard flour wild yeast, I made Maple Cinnamon Rolls and KOKUTO Currants Rolls. For the Maple Cinnamon rolls, I omit sugar and used maple syrup. The crumb was soft and nice but it was kinda tasteless. It was not sweet enough for Cory. :( I think it needed more salt. For KOKUTO Currants Rolls, as the title says, I used KOKUTO(muscovado sugar) and currants. The crumb was not soft, and I couldn't taste much of KOKUTO... oh well, least I know the yeast is working! ;)
I have been using the same mother I made about a year ago. And first bread I made was focaccia. I split the mother to 2 and made a new mother! I use rye flour to refresh the mother but I used white hard flour for this new mother. And for the first try, I made Focaccia :) I found the "white flour mother" Focaccia is more tasty! The crust was nicely toasted and the crumb was moist and soft.

Cauliflower and Cabbage Soup : onion, cabbage, cauliflower cooked in the pot with a little salt until soft. put in the mixer machine. add some salt & pepper. The soup is very easy to make and I like eating them but I don't like washing the mixer machine!! It's very old and heavy... :(
I tried a different recipe for the Campagne today. Almost same progress and fermentation time but different "Levain". It didn't rise as much as the other recipe. I thought it's not going to be great and disappointed when I took it out from the oven... But! the taste fine. It wasn't as bad as I thought it would be. If I would try this recipe again, I will take 2nd fermentation time like 12 hours in the fridge.
